This Warm Spinach Artichoke Dip is a creamy, cheesy delight with a lighter twist.   • Yield: 6 Servings

Ingredients

1 cup reduced sodium cottage cheese

1 cup nonfat plain Greek yogurt

2 tablespoons grated parmesan

1/3 cup + 2 tablespoons reduced sodium shredded mozzarella, divided

7 ounces artichoke hearts, drained, rinsed and chopped, half a 14-ounce can

1 cup chopped spinach

2 cloves garlic, minced

Fresh ground black pepper, to taste

Fresh vegetables or crackers, for dipping, optional

Instructions

1  Preheat the oven to 350ºF. Using a large bowl combine the cottage cheese, yogurt, parmesan, ⅓ cup mozzarella, artichoke hearts, spinach and garlic, season with pepper.

 

2  Transfer dip to a 1-quart ovenproof baking dish. Top with remaining 2 tablespoons of mozzarella.

 

3  Bake until the dip is heated through and starting to brown on top, about 25-30 minutes.

 

4  Serve warm with fresh vegetables or crackers, if desired.
