This Orange Cinnamon French Toast offers a wholesome twist on a breakfast classic, making it a delicious and healthy addition to your morning routine. Ingredients

6 slices whole grain bread

2 large eggs

2 large egg whites

1 cup unsweetened oat milk

1 teaspoon cinnamon

1 teaspoons vanilla extract

Zest of one orange

1/4 cup fresh squeezed orange juice

1 tablespoon vegan butter

1 cup mixed berries

2 tablespoons hemp hearts

Reduced or no sugar maple syrup, for serving, optional

Instructions

1  Lay bread out on a baking sheet, uncovered, to dry overnight,

 

2  Using a shallow bowl or pie plate, whisk together the eggs, whites, milk, cinnamon, vanilla extract, and orange zest and juice. Dip the bread in the egg mixture, let sit for 5 seconds, flipping to coat both sides.

 

3  Using a large non-stick pan over medium high heat, melt the butter. Place soaked bread in the pan and cook until golden brown, about 4 minutes per side.

 

4  To serve, top the French Toast with berries, hemp hearts and maple syrup, if desired.
