These No Bake Double Chocolate Brownies are everything you could want in a treat—rich, fudgy, and chocolatey—but without the refined sugar, dairy, or gluten. Packed with high-protein nuts, fiber-rich dates, and healthy fats from walnuts and almonds, this recipe is a snack or dessert you can feel good about enjoying any time of day.

The combination of natural sweetness from the dates and the deep cocoa flavor makes these brownies decadent yet wholesome. Plus, they’re vegan and require no baking, making them a quick and easy option for busy days. A sprinkle of chocolate chips and chopped walnuts on top adds the perfect crunch and texture contrast.

Dr. Blake’s Top Tip: For an extra touch of indulgence, sprinkle a pinch of flaky sea salt on top after pressing the chocolate chips and walnuts. It beautifully enhances the chocolate flavor.

  • Yield: 20 Cookies

Ingredients

2 1/2 cups dates, pitted

1 1/2 cups raw walnuts, divided

1 cup almonds

3/4 cup cocoa powder

1/4 teaspoon kosher salt, plus more for garnish, optional

1/4 cup uncooked oats

1 tablespoon coconut oil, melted

1/4 cup non-dairy mini chocolate chips

Instructions

1  Line an 8-inch x 8-inch baking pan with parchment paper, allowing overhang on each side, set aside.

2  Using a food processor, add the dates and process until the dates form a large ball. Transfer the date ball to a small bowl, set aside.

3  Combine 1 cup walnuts and almonds and process until finely ground. Add the cocoa powder, salt, oats and coconut oil, pulsing to combine.

4  Gradually add small pieces of the date ball through the feed tube, processing until the mixture forms a dough consistency.

5 Press the brownie mixture into the prepared pan, smoothing the top surface. Chop the remaining ½ cup walnuts. Sprinkle the walnuts and chocolate chips on top and press into the brownies.

6  Refrigerate and chill for 15 minutes before cutting. Store refrigerated in an airtight container.
