This Fresh & Healthy Salad is a vibrant, modern twist on the classic chopped salad, with a special star: sun-dried tomatoes! These little flavor bombs bring a rich, tangy kick that makes every bite exciting. Tossed with crunchy romaine, creamy chickpeas, crisp cucumbers, and a sprinkle of shaved parmesan, this salad is a perfect balance of freshness and bold taste.

 

Sun-dried tomatoes aren’t just here to add flair—they also bring a good dose of antioxidants and vitamins C and K. Paired with the heart-healthy olive oil, protein-packed chickpeas, and a touch of oregano, this dish has some real nutritional punch. With every forkful, you’re getting a bit of California sunshine (or wherever those tomatoes were dried!), making this a salad that feels special, nourishing, and seriously tasty.


Dr. Blake’s Top Tip: This salad (made famous by the Kardashians) becomes a full meal by adding crispy chickpeas, salmon filet, or grilled chicken.

  • Yield: 4 servings

Ingredients

2 heads of romaine lettuce, chopped

1/3 cup sundried tomatos

1 15oz can of low sodium chickpeas, rinsed and drained

1/2 medium sized cucumber, cut in half lengthwise and then sliced into thin half moons

1/3 cup shaved parmesan cheese

3 tbsp olive oil (or oil from the jar of dried tomatoes)

2 tbsp red wine vinegar

1 tbsp dijon mustard

2 tbsp dried oregano

Freshly ground pepper

Instructions

  1. Mix the Dijon mustard, red wine vinegar and pepper in a medium bowl. Whisk in the olive oil.

  2. Combine all other ingredients in a large bowl and mix well. Add the dressing and mix again.  Serve in plates or medium sized bowls.
