Ingredients
2 heads of romaine lettuce, chopped
1/3 cup sundried tomatos
1 15oz can of low sodium chickpeas, rinsed and drained
1/2 medium sized cucumber, cut in half lengthwise and then sliced into thin half moons
1/3 cup shaved parmesan cheese
3 tbsp olive oil (or oil from the jar of dried tomatoes)
2 tbsp red wine vinegar
1 tbsp dijon mustard
2 tbsp dried oregano
Freshly ground pepper
Instructions

Mix the Dijon mustard, red wine vinegar and pepper in a medium bowl. Whisk in the olive oil.

Combine all other ingredients in a large bowl and mix well. Add the dressing and mix again. Serve in plates or medium sized bowls.
