I love this as a kidney-healthy, kidney-friendly quick dessert or snack. Just stick to one per serving or the sugar will add up quickly. 

 

Dr. Blake’s Top Tip: For an extra special touch, experiment with garnishes—try a sprinkle of flaky sea salt, a dusting of cocoa powder, or even a crushed nut topping. These small additions elevate the look and flavor, making your gift even more memorable!

  • Yield: 2 Dozen Cups

Ingredients

2 cups dark chocolate chips

1/2 cup Homemade Almond Butter

Sea salt, for garnish, optional

Instructions

1  Place the chocolate chips in a microwave safe bowl. Working in 30 second increments, melt the chocolate, stirring each time until smooth.

 

2  Line two 12-cup mini muffin pans with paper liners. Place a teaspoon of melted chocolate in each cup, swirling the pans to coat the sides. Put the pans in the freezer to set the chocolate, about 10 minutes.

 

3  Place a teaspoon of Homemade Almond Butter in the center of each cup, gently tap the pan on a counter to level. Top the cups with a teaspoon of chocolate to cover, gently tap the pan again to level. Sprinkle with salt, if desired, and freeze until completely set, about 30 minutes. Store refrigerated in an airtight container.
