The combination of the zesty Buffalo Cauliflower Dip and the acidic limey vegetable relish takes this appetizer to a new flavorful level. If you’re pressed for time the dip can easily stand on its own. For easy entertaining, make the relish and dip ahead and heat the dip just before guests arrive.

 

Packed with roasted cauliflower, creamy cottage cheese, and a kick of low-sodium hot sauce, it’s a perfect appetizer or snack that’s big on flavor and low on sodium. The Lime Cilantro Relish adds a bright, zesty contrast to the rich, spicy dip, making it a hit for any occasion.

 

For dipping, pair this with Homemade Tortilla Chips or crunchy carrot and celery sticks for a healthier option. This dish is ideal for gatherings or game days and can easily be adjusted for heat by increasing or reducing the hot sauce to suit your taste.

 

Dr. Blake’s Top Tip: Roast the cauliflower until it’s lightly browned to add a deeper, smoky flavor to the dip. Make the Lime Cilantro Relish ahead of time for easy assembly and to allow the flavors to meld beautifully.

Ingredients

1 medium head cauliflower, cut into florets, about 4 cups

1 cup low fat cottage cheese

1/2 cup light sour cream

2 cloves garlic

1/2 teaspoon dried dill

1/2 teaspoon dried thyme

1/3 cup low sodium hot sauce, or more to taste

1/2 cup reduced fat shredded cheddar cheese, divided

1 green onion, sliced

1 cup Lime Cilantro Relish, optional

Homemade Tortilla Chips or carrot and celery sticks, for serving, optional

Instructions

1  Preheat the oven to 375° F. Line a baking sheet with parchment paper. Place the cauliflower on the pan and roast until tender and starting to brown, tossing halfway through roasting, about 20 minutes. Set aside to cool and reduce the oven temperature to 350° F.

 

2  Using a food processor fitted with a blade attachment, combine the cottage cheese, sour cream, garlic, dill, thyme and hot sauce, and process until smooth. Add the roasted cauliflower and ¼ cup cheddar and pulse just until just combined and the cauliflower is bite size pieces. Do not overprocess. Transfer the buffalo dip to a shallow baking dish or ceramic pie plate and bake for 10 minutes. Remove pan from oven, sprinkle with remaining ¼ cup cheddar cheese and return to oven until the cheese is melted and dip is warmed through, about  5 minutes.

 

3  Sprinkle with green onions and serve warm with Lime Cilantro Relish on the side or place in the center of the dip. Serve with Homemade Tortilla Chips or carrot and celery sticks for dipping, if desired.
