These Blueberry Lime Oat Bars are the perfect combination of tart and sweet, with a bright lime zest and a naturally sweetened blueberry filling. Made with homemade oat flour, quick oats, and coconut sugar, these bars are not only vegan but also a nutritious option for any time of day. They’re great as a breakfast-on-the-go, a midday snack, or even a light dessert.

 

For those managing chronic kidney disease (CKD), these bars can be a kidney-healthy treat when portioned appropriately. The use of oats and plant-based, unsalted butter keeps potassium and sodium levels in check, while blueberries provide antioxidants and a burst of natural flavor.

Ingredients

Scale

2 1/2 cup frozen blueberries

1 tablespoon cornstarch

Zest of one lime

1 teaspoon vanilla extract

1 1/2 cup Homemade Oat Flour

1 cup quick oats

Pinch of salt

1/3 cup coconut sugar

4 ounces plant based, unsalted butter (1 stick), cut into small cubes and chilled

Instructions

1  Line a 9-inch square pan with parchment paper, allowing the paper to overhang on the edges, set aside. Using a small saucepan over medium heat, combine the blueberries, cornstarch and lime zest. Cook, stirring occasionally, until the blueberries start to break down and mixture thickens slightly, about 15 minutes. Transfer blueberries to a bowl, add the vanilla, set aside to cool.

 

2  Preheat oven to 350ºF. Using a large bowl, combine the Homemade Oat Flour, quick oats, salt, coconut sugar and butter. Mix quickly with your hands until combined and crumbly in texture.

 

3 Pour 2/3 of the crumble mixture in the prepared pan. Press the dough evenly to cover the bottom of the pan. 

Pour the blueberries on top and use a spatula to smooth. Sprinkle the remaining crumble mixture on top as evenly as possible to cover.

 

4  Bake until the bars are golden brown, about 30 minutes. Place on a wire rack to cool completely before cutting into 12 bars. Store refrigerated in an airtight container.
